This week we sampled two freezer meals.
Tuesday we had slow cooker turkey black bean chili. This is from my friend Kelly at New Leaf Wellness. She is really enthusiastic about freezer meals and I’m really enthusiastic about her recipes! This chili was the easiest freezer meal I made. I cooked the turkey and combined everything else and threw it all in a freezer bag.
After thawing in the fridge overnight I threw it in the crock pot. I didn’t have to do anymore prep… we just enjoyed it 6 hours later! I wasn’t sure when I was putting it together how it would all taste. But it tasted great! It was the perfect combination of spices. And I don’t normally care for ground turkey, but it was really good in this recipe. I think it would have been good for six or more servings, but Doug and I both had seconds, even though it was pretty filling! I will be making this recipe again. I think I’ll double it so we have two!
Thursday night I made this BBQ chicken and vegetables. The vegetables are sweet potatoes, onion and red pepper. The BBQ is homemade. This meal took awhile to prepare because I had to cut up everything. But I was also able to divide it into three meals, so I suppose the labor equaled the result. Mine doesn’t look like the picture on the blog. When meals are served over rice, I usually prefer to mix the rice into the meal just so that I don’t run out of the prepared rice.
I liked the sweet potato taste, but the BBQ taste was lost by the time it was done cooking. It also took the extra prep of making the rice, though maybe if I ever got a rice cooker that wouldn’t be so much of an issue. We will definitely eat the other two servings of this we have in the freezer (and the leftovers in the fridge), but I don’t know if I would make this again.
